My Favorite Food In India

I am in India now playing with the Champions Tennis League in my favorite city Bangalore, where I have great memories of playing.  I love Indian food!  My diet has changed after arriving here -  I cheat a lot and don't feel bad about it!  My favorite is Bhindi Masala, a spicy vegetarian dish made with okra and tomato. Here's my healthy version -  Enjoy!

Bhindi Masala

INGREDIENTS
1/4 cup canola oil (or any other oil you prefer)
12 cloves garlic, thinly sliced
4 chiles de árbol, chopped
1 small red onion, sliced
1 lb. okra, sliced ⅓" thick
1½ tbsp. garam masala
1 tbsp. ground coriander
1 plum tomato, chopped
Kosher salt, to taste

INSTRUCTIONS
Heat oil in a 12" skillet over medium-high. Cook garlic, chiles, and onion until golden, 4–6 minutes. Add okra, garam masala, coriander, tomato, salt, and ⅓ cup water; cook until okra is crisp-tender, 3–4 minutes.
